A Gluten Free Success

I use to be a whiz at pastry.  My mom taught me how to make regular pastry by hand years ago and it was awesome.  It was flaky and tasty.  Delicious.  Then came the diagnosis and poof –  away went my ability to make yummy pies.  Over the years I have tried so many different recipes and nothing worked.  Then I saw a post on a Celiac Group that has allowed me to recapture my pastry making days.  I made sugar pie and it was delicious and flaky.

Girls even started to help.  A special thank you to the person who shared that rolling out the pastry in between parchment paper makes all of the difference.  It rolled beautifully and baked up just as nicely.
